I think you're over-simplifying. Yes, there are examples of players who have stayed despite wanting away, but there are many other factors to it.
Once agents have spent a month establishing a rhetoric of 'Payet desperately wants to leave' in the tabloids, the issue becomes more complex.
Yes, the club don't have to sell. But the club do have to weigh one thing against another to gauge what's in their best interest.
If Payet isn't going to be himself and is generating negativity in the dressing-room, they will have to weigh keeping a potentially underperforming or unhappy Payet against bringing in vast amounts of money for a player approaching 30, the kind of money which could be spread across every position.
So yes, the club doesn't ever have to sell, nor ever name a price. But it doesn't mean they won't sell if we reach a point where they believe they'd rather have huge swathes of money instead of a sulking 29 year old.
(FYI, I don't think Payet is likely to sulk at all. But that's not to say agents and press won't whip up a rhetoric to say he is, which he might happily go along with because he knows deep down this would be his last chance to play for Madrid or PSG.
And, as I mentioned, it's a situation which I don't think the owners would be totally against, as if they can lay all the blame on Payet, fans tend to be very understanding and they make a huge profit on him).
I can only envy Charles Perrin getting paid for this kind of rubbish.
Chelsea boost for Dimitri Payet: West Ham worried big club might snatch top star
How is West Ham being 'worried' a boost for Chlesea?
WEST HAM are reportedly growing increasingly concerned about keeping hold of Dimitri Payet.
The attacking midfielder has been in sensational form for France at Euro 2016.
The 29-year-old has found himself linked to Chelsea in recent weeks, as Antonio Conte seeks to revamp his squad.
Atletico Madrid are also thought to be interested in the player, who has been slapped with a £60million price tag by West Ham.
Except, he hasn't, as the club have pointedly refused to set a price.
But according to the Daily Mirror, the Hammers are worried one of Europe’s big clubs will snatch their star man.
What does the conjunction 'but' link to there? Nothing.
However, it is believed they have no desire whatsoever to sell Payet.
Er, so which is it?
Arsene Wenger admitted earlier this week he tried to sign Payet.
You'll like this bit...
When pressed about the matter, he said: “Yes. Often. Very often, I have to say that I asked myself that question during my career.
“And I also have to say that I decided against it because he was not consistent. I have never doubted that he had enough talent to play in my team.
“I have been lucky enough in my club to always have very good players in his position and it was crowded!”
So, Wenger actually said he had thought about signing Payet, and decided not to.
There's a bloke getting paid cash money to read the work of other (?proper) journalists, and then getting his mish-mash of a story wrong in just about every respect.
There is clearly no effort at editorial supervision, so next time you read an online story, even from a national newspaper, remember to keep plenty of salt to hand.
The problem is the owners will look like a laughing stock if they sell Dimi this summer after all their spiel about taking us to the next level through the Olympic Stadium move.
You couldn't kick off a new era for the club in a more negative way than by selling Payet.
This young man has it down right imo......
Although I actually don't think anyone will bid mega bucks for Payet.
Problem with getting insane sums of money is that the money isn't usually reinvested wisely
Look at Bale and Suarez, 2 mega mega deals, the type of money we will be looking for Payet and he's honestly as good as those palyers
But look how hard liverpool & spurs messed up replacing him, blew the load on average players
Keeping payet is much better than £60mil and I personally see him staying because I don't think the huge clubs are going to pay sooooo much money for a 29 year oldso here's hoping
Chelsea 7/2 Real Madrid 8/1 PSG 9/1 Manchester Utd 12/1 Atletico Madrid 12/1 Arsenal 16/1 Bayern Munich 20/1 Barcelona 20/1 Juventus 20/1 Olympique de Marseille 33/1

I think we have some canny people running the club...
But if the club refuse to set a fee, no club can match it.
Nothing to see here, move along to your next target.

Each to their onions.
I think you are over-thinking it.
Club isn't going to sell Payet.
End of.

Which suggests Payet is not looking to force a move, and that the ball is completely in WHU's court when it comes to his future.
